Whole-Wheaty Vegan Banana Bread


Although I have a recipe for stove top banana bread, which is delicious, I have been on a mission to create a bread that is easy, fast, requires few ingredients, and is compatible with a sugar-free diet.  After several attempts and comments that adjustments ought to be made, here is the following recipe to its current perfection.

2 cups mashed banana
2 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/4-1/2 teaspoon nutmeg (optional)
4 tablespoons honey

Mash the bananas and mix in the honey.  Set aside.  
In a separate bowl, combine all dry ingredients and stir (or sift) until fully combined.
Combine the wet and dry ingredients and mix until just combined.  Dough will be very thick.

If cooking on the stove top:
Lightly oil (with canola oil or butter) a frying pan  and put it on low heat.  Place dough unto the pan and, using the back of a spoon, spread the batter evenly on the pan.  Use a lid or larger pan (upside-down) to trap in the heat. 
Cook for roughly 5 minutes, until the underside is lightly brown.  Flip and cook for another 5 minutes, or until a toothpick inserted comes out clean.

If cooking in an oven:
Warm an oven to 325 degrees F and grease a small loaf pan.  Spoon the dough into the pan and spread evenly.  Sprinkle with oats, seeds, or any desired topping.  Bake for 45-60 minutes, or until a toothpick inserted comes out clean.  Let cool and enjoy.

I happened to make mine for Valentine's Day, hence the shape.
