Choco-Brownie Oreo Cookies


  These things are delicious.
Alex and Sam asked me for something chocolaty, and this is what I came up with.  I adapted the original recipe from the Joy of Baking blog, which has been a wonderful resource to me.  

Ingredients:
1/3 cup unsalted butter, room temperature
1/2 cup (105 grams) light brown sugar
1 large egg
1 teaspoon pure vanilla extract
1 cup (130 grams) all purpose flour
1/4 cup (30 grams) Dutch-processed cocoa powder
1/2 teaspoon baking powder
1/8 teaspoon salt
4-8 oreo cookies





 Combine the butter (at room temperature, or slightly soft) and sugar.  Beat as hard as possible.  Ideally you would use an electric mixer, but I am without.  If you can get it to look at least like this, you'll be fine.



Combine all dry ingredients, sans cookies, in a bowl.  Sift if possible or, if you are without a sieve, mix in a bowl until thoroughly combined.  I use a fork.  Be sure to leave no clumps of cocoa or baking powder.



Mix the dry ingredients into the wet and stir until combined.  Then through in your cookies and try not to eat them all.






To cook on a stove top, warm a frying pan and melt a pat of butter in it.  Set your gas stove to the lowest setting possible while still allowing your pan to warm and melt the butter.  Leave it at this temperature.  Spoon your batter onto the pan, like drop cookies, and try to use as much of the pan space as possible, for butter that is not absorbed will simply burn onto the pan.  Place a second pan upside down over the first to trap in the heat.  Cook for 3-4 minutes until the bottom of the cookies are slightly brown.  Flip gently, keeping the dough together.  Cook for another 3-4 minutes until both sides are slightly browned but not burned.  They will be gooey, but that's perfect. :)
